Absolutely one of the best things I ever tasted was Basilacotta, a new product The Regal Vegan was offering samples of at the NYCVFF 2012. I almost crapped my pants. Like seriously.

This week at my local farmer’s market I picked up a container of a Basil Cashew Cheeze made by a local raw food collective that sells great items, I’m always blowing my whole farmer’s market budget at their table and sipping on green juice and hauling home raw pumpkin almond milk (you read that right. I know, you’re jealous, it’s ok, breathe).
Anyways I can’t express how much I love this delicious treat and I’m also pretty sure I’ve figured out how to make it at home. Soaked cashews + fresh basil + lemon juice. Also probably garlic, salt, any other seasonings you might like, all I’m saying is go ahead and make some dang it! I mean how wrong can you go? Cashews and basil. Adjust the rest to taste and freaking ENJOY.
